Pumpkin or Banana cake roll?? Hmm, I love both but no one in my family likes pumpkin roll cake. This banana roll works out perfect for the holidays for me. My 2 picky eaters at home even ate it. This recipe was given to me by one of my friends who is a chef.
Cake recipe
1 cup cake flour
1/4 teaspoon baking powder
1/2 teaspoon baking soda
2 eggs
3/4 cup sugar
1/2 teaspoon grated lemon peel (optional)
1 teaspoon vanilla extract
1/2 cup mashed ripe banana (about 1 medium)
3 egg whites
1 tablespoon confectioners’ sugar

In a small bowl combine the flour, baking powder and baking soda.
In a large mixing bowl, beat whole eggs for 5 minutes add 1/2 cup sugar, vanilla ,banana and lemon peel.
In another bowl beat egg whites on medium speed until soft peaks form. Gradually beat in remaining sugar, a tablespoon at a time, on high until stiff peaks form.
Add flour mixture to banana mixture. mix gently until combined.
Fold in egg white mixture.
Make sure baking pan is coated with nonstick cooking spray with waxed paper .
Spread into prepared pan.Bake at 375 degrees for 10-12 minutes or until cake springs back when lightly touched.
Let it cool 5- 10 minutes
Get a kitchen towel and wet it lightly. Place it on counter and dust with confection sugar.
Turn cake onto a kitchen towel.
Slowly peel off waxed paper. Roll up cake in towel jelly-roll style. Let it cool.
Filling ingredients
4 oz cream cheese
1/2 cup packed brown sugar
1/2 teaspoon vanilla extract
1 cup whipped topping
1 tablespoon confectioners sugar
2 tablespoon caramel ice cream topping
Beat cream cheese and brown sugar until smooth and sugar is dissolved. Beat in vanilla fold in the whipped topping. Unroll cake and spread the filling. Roll back up, sprinkle with confectioners’ sugar and drizzle caramel topping.
Don't do what I did. My cake was still warm and the caramel just melted down so fast. Wait completely for cake to cool before you add the filling. I was in the rush cause my baby was waking up.
